Red Kidney Bean Hummus

To make this, combine the following in a blender or food processor:

  • 1 can red kidney beans
  • 1-2 tablespoons tahini (to taste)
  • 1 small clove of garlic, minced
  • Juice of 1-2 lemons (to taste)
  • Cumin (to taste; I usually add about 1/4-1/2 teaspoon)
  • Pinch of salt and black pepper (to taste)
  • 1 small glug olive oil (about a teaspoon)
  • Spoonful or two of water (if needed for procesing)

Process until smooth, taste, adjust seasonings, eat up (with pitas, cut vegetables, crackers, etc). It lasts up to 5 days in the fridge.
